Delicious Fried Rolls with Minced Meat and Vegetables: A Crispy Delight

Method

  1. Prepare the Filling:
    • Heat the olive oil in a large skillet over medium heat. Add the finely chopped onion and garlic, sautéing until they become fragrant and translucent.
    • Add the minced meat to the skillet and cook until browned, breaking it apart with a spatula. Ensure the meat is fully cooked and no longer pink.
    • Stir in the grated carrot, shredded cabbage, and chopped bell pepper. Cook for an additional 5-7 minutes until the vegetables are tender.
    • Add the soy sauce, ground ginger, salt, and pepper to the mixture. Stir well to combine and let the filling cook for another 2-3 minutes. Remove from heat and let it cool slightly.
  2. Assemble the Rolls:
    • Place a spring roll wrapper on a clean, flat surface, with one corner pointing towards you (so it looks like a diamond shape).
    • Spoon about 2 tablespoons of the filling onto the wrapper, near the corner closest to you.
    • Fold the corner over the filling, then fold in the sides, and roll up tightly to enclose the filling. Brush the beaten egg on the top corner to seal the roll. Repeat with the remaining wrappers and filling.
  3. Fry the Rolls:
    • Heat oil in a deep frying pan or wok to 350°F (175°C). Ensure there is enough oil to submerge the rolls completely.
    • Carefully place a few rolls at a time into the hot oil, frying until they are golden brown and crispy, about 3-4 minutes. Turn them occasionally to ensure even browning.
    • Remove the rolls with a slotted spoon and drain on paper towels to remove excess oil.
  4. Prepare the Dipping Sauce (Optional):
    • In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, and honey. Stir in the finely chopped green onion and sesame seeds.
  5. Serve:
    • Arrange the fried rolls on a serving platter and serve hot with the dipping sauce on the side.
